Blueberry Roll Up
It’s been a warm winter so far and some of the spring flowers are already starting to bloom, so I guess I’m thinking of those fresh blueberries that abundantly grow here in north Florida!
1-1/2 cups fresh blueberries
1/4 cup plus 3 tbsp sugar
1 egg, slightly beaten
1/4 cup heavy cream, approximately
2 cups biscuit mix
Add the 1/4 cup sugar to the blueberries that have been washed and well drained. Add enough cream to the beaten egg to measure 1/2 cup liquid and add the remaining sugar, blend well. In a large bowl, combine the biscuit mix with the egg mixture and stir just to moisten, dough will be stiff. Roll dough out on a floured surface to measure and 8×10-inch rectangle. Sprinkle with the berries evenly over the dough to within 1-inch of the edges. Roll dough up lengthwise and place, seam side down, on a greased baking sheet. Bake in a 400 degree oven for 30 minutes or until golden brown. Enjoy with a nice hot cup of coffee in the morning!
