Garlicy Tomato Soup

Nice Italian flavored tomato soup that’s easy to make!


1 tbsp unsalted butter
6-8 cloves of garlic, depending on taste preference, minced
2 tbsp flour
1 can (16oz) Roma peeled tomatoes with their juice
1 teas salt
½ teas fresh ground pepper
2 eggs, separated


In a saucepan, melt the butter over medium heat and add the garlic; saute until softened but not browned. Stir in the flour and cook without browning for 2 minutes. Stir in the tomatoes and the juice, 4 cups of water, salt and pepper. Bring to a boil, reduce heat and simmer for 30 minutes. Place mixture into a food processor and coarsely chop. Return to saucepan and reheat gently. Whisk the egg whites and while stirring the soup, pour in the egg whites in a thin stream. In a small bowl, lightly beat the egg yolks and slowly add 1 cup of the soup mixture into them. Return this mixture to the pan and cook, stirring over medium heat until the soup mixture thickens; do not boil. Serve up with some garlic bread if you’re brave enough and make sure you’re sweetie eats some too so you both have garlic breath!
