Years ago when Kenny and I decided to buy a meat grinder to make our own hamburger, we decided it would be fun to try to make sausage too! When we found this recipe and brought some to my mom, she said it was just like what my grandpa used to make, what a great compliment…
6 lbs pork shoulder, without the bone
2 teas white pepper
2 teas sage
1/2 teas thyme
3 tbsp Kosher salt
1/4 teas cayenne pepper
Cut meat into strips that will easily fit into your grinder. Using a medium blade, grind meat once, sprinkle with the seasonings and mix thoroughly. Grind meat again, this time using the small blade. Package meat in weights (I do mine in 1/2 pound packets) according to how much you’ll use at one time and place in a large freezer bag and freeze. Don’t forget to keep some out for breakfast the next day to go with those nice hot pancakes or waffles………..enjoy!
