Apricot Glazed Pork Chops

Here I go again, combining fruit and meat; but hey, can you think of anything better? Well let me take that back, maybe some beer!


2/3 cup apricot preserves
1/2 cup Italian dressing
2 tbsp Dijon mustard
4 thick pork chops


Whisk together the first three ingredients. Place chops in a resealable plastic bag with 3/4 cup of the mixture, seal and refrigerate overnight, turning occasionally. Refrigerate the remaining sauce for basting the next day. Grill chops over medium-low coals, basting with the remaining sauce occasionally and turning every 10 minutes, for about 30-40 minutes or until chops are cooked through. Have a nice baked potato and salad, and of course don’t forget a brew or two!
