Fried Yellow Squash Balls
Kenny is not overly fond of squash, but if I fry it, he’ll eat it!
2 cups cooked mashed yellow squash
1 medium onion, finely chopped
¼ to ½ cup buttermilk
½ cup flour
¾ cup self-rising cornmeal
¼ cup sugar
Mix all ingredients and drop by tablespoonfuls into a deep fryer or a deep skillet with the oil at 375 degrees. Fry until golden brown and drain on paper towels. Good with any kind of pork!
