Venison Sausage

Today is Election Day and it brings back fond memories of my dad having the day off to start his deer hunting in the wee hours of the morning to get that big buck! This recipe hails from my brother-in-law up in New York who makes homemade sausage with every deer he is lucky enough to get!

 

10 lbs venison
10 lbs pork butt
¼ lb salt
4-5 cloves crushed garlic
8 tbsp sage
3 tbsp crushed red pepper
4 lbs sausage casings

 

Grind venison and pork together once using a medium size cutter. Add spices and mix well; grind 2 more times. Stuff casings or you can also make into patties and freeze……..Oh biscuits and gravy made with this tasty sausage! Oh, and if you haven’t voted yet, get out there and do it!
