Rabbit Sausage

I’m not kidding, really!

 

1 dressed rabbit (6 lbs) cut up
2 teas salt
1 ½ teas rubbed sage
1 ¼ teas white pepper
¾ teas ground nutmeg
½ teas ground cinnamon
1 cup finely chopped and peeled tart apple

 

In a large bowl, combine the first 6 ingredients and mix well. Cover and refrigerate overnight. Coarsely grind meat and stir in the apple. Shape into patties and fry in a small amount of oil for about 5 minutes on each side or until no longer pink on the inside. Something different to go with your eggs in the morning!
