Peanut Butter Oven Fried Chicken
I love peanut butter and celery, but chicken?
3 lbs chicken, cut up
½ cup smooth peanut butter
¼ cup butter
1 ½ cups salted cocktail peanuts, finely chopped
Rinse chicken and pat dry. In a small saucepan, melt peanut butter and butter over low heat. Dip chicken into peanut butter mixture and roll in chopped peanuts. Place onto a greased baking sheet, skin side up and bake in a 375 degree oven for about 1 hour, flipping after 45 minutes, and cook until tender and juices run clean. Peanuts are so good for you, so why not on our chicken? Enjoy!
