Chocolate Whiskey Cake

Now we’re talking!


½ cup seedless raisins
2/3 cup bourbon
1 cup sugar
¼ cup water
10 squares (1 oz each) unsweetened chocolate, broke up
¾ cup butter, softened
6 eggs, separated
1 cup ground blanched almonds
½ cup flour


Soak raisins in whiskey. Boil the sugar and water together and add chocolate; remove from the heat and stir until chocolate is melted, let cool. Meanwhile, beat butter until light and fluffy, add 1 egg yolk at a time and mix well; on low speed, add half the chocolate mixture and then half the almonds; repeat. Add whiskey and raisins and beat in the flour. Beat egg whites in another bowl until stiff and fold them into the batter. In a 9-inch spring form pan, line the bottom with wax paper and to this grease and flour. Bake in a 375 degree oven for 30 minutes and top with your favorite frosting or just plain is okay too!
