Mexican Chicken With Jalapeno Rice
Really tasty way to fix chicken!
1 teas chili powder
1 teas ground cumin
2 large boneless, skinless chicken breast
1 ¼ cups chicken broth
½ cup long grain rice
1/3 cup coarsely chopped onion
¼ cup diced green chilies
1 small tomato, seeded and diced
Combine the chili powder and cumin reserving ½ teaspoon, rub the remainder into the chicken breast. Bring the chicken broth to a boil in a skillet. Stir in the rice, onion, chilies and remaining seasoning. Arrange chicken on top. Cover and simmer for 20 minutes. Remove from heat, stir in tomatoes and let stand, covered, until all liquid is absorbed. Enjoy!
