Cheesy Bacon Muffins

 

These tasty muffins are great when you’re serving up some mac ‘n’ cheese and fried pork chops are good with them too!

 

  • 1 ¼ cups milk
  • 1 egg
  • 2 cups flour
  • 3 teas baking powder
  • ¼ teas salt
  • 6 slices bacon, cooked crispy and crumbled

 

Beat the milk, oil and egg in a mixing bowl. Stir in the flour, baking powder and salt just until the flour is moistened. Fold in the cheese and bacon. In a medium muffin tin, grease just the bottom of 12 of the muff tins and spoon in the batter to fill each muffin ¾ of the way full. Bake in a 400 degree oven for 18-20 minutes or until golden brown, immediately remove from the pan and wrap in a bread basket for the dinner table.
