Scottish Scones ‘n’ Raisins

 

An oldie but still a goodie!

 

¼ cup butter, softened
2 ¼ tbsp powdered sugar
6 tbsp baking powder
1 large egg
1 ½ cups milk
4 cups cake flour
¼ teas salt
½ cup raisins

 

How to prepare Scottish Scones “n” Raisins:

Cream the butter, salt and sugar, add egg and then the milk. Sift the flour and baking powder together and mix into the creamed mixture and work lightly until smooth, mix in the raisins. On a floured surface, roll out the dough to ½ inch thickness and cut with a biscuit cutter and then cut each into 4 quarters. Place on a greased cookie sheet and bake in a 400 degree oven for 16-18 minutes or until golden brown! Brew up a pot of tea and enjoy!
