Sounds good to me and will definitely try this one out!
4 teas flour
2 teas sugar
Pinch of cinnamon
2 teas cold butter
In a small bowl mix the first 5 ingredients. In another bowl whisk the egg, milk, butter and espresso until the powder is dissolved. Stir into the dry ingredient just until moistened. Fill 6 paper-lined muffin tins 2/3 full. For the topping combine the flour, sugar and cinnamon; cut in the cold butter until the mixture looks like coarse crumbs. Sprinkle about 1 teaspoon of the mixture onto the top of each muffin. Bake for 18-20 minutes in a 400 degree oven. Cool for 5 minutes in pan and remove to wire rack to cool completely!
