I like a new twist to an old recipe and this one fit the bill……
6 medium sweet potatoes
¼ cup of butter, softened
2 cups (8oz) shredded Swiss cheese
6 bacon strips, cooked and crumbled
½ teas salt
¼ teas pepper
Clean the potatoes; pierce with a fork and bake in a 375degree oven for about 1 ¼ hours or until tender. When cool enough to handle, cut potatoes in half and gently scoop out the meat, leaving a thin shell. In a large bowl mash the pulp with the butter. Stir in the cheese, bacon salt and pepper. Spoon back into the skins; place in a baking pan and bake for 20-30 minutes longer or until heated through. Great go along with any kind of pork dish……..
