Everybody loves brownies, and the coconut adds a nice touch!

1 cup butter, softened
2 cups sugar
4 eggs
1 teas vanilla extract
1 ½ cups flour
½ cup plus 2 tbls baking cocoa
½ cup coconut flakes

In a large bowl, cream butter and sugar; add eggs one at a time and beat well after each addition. Combine the flour and cocoa and gradually beat into the cream mixture just until blended. Stir in the coconut. Spread into a greased 13x9x2 inch pan and bake at 350 degrees for 22-25 minutes or when a toothpick inserted in the center comes out clean……..Get out that vanilla ice cream and enjoy!!!
