This one made me think of home as a youngster, going to my dad’s company clambake every summer! One year I even got to take my Nellie Bell Jeep to ride around in, boy did I think I was hot stuff!!

1 ½ cups yellow corn meal, divided
½ cup cake flour
2/3 cup water
12 fresh Cherrystone clams, shucked
Oil for frying
½ teas salt

 

In a small bowl mix ¾ cup cornmeal and ¼ cup flour with the water and mix well. In another small bowl mix the remaining cornmeal and flour. Dip the clams in the batter, shake off the excess, then dip in the dry mix. In a deep fryer heated to 375 degrees, fry the clams a few at a time for 4-5 minutes or until golden brown.
