Josies Goulash

Italian or Irish? I have been making this dish for years and my mom made a similar dish that she called, Irish Goulash! What’s up with that, as the ingredients lean more to the Italian side than Irish! Never could figure that one out…….

 

2 cups uncooked elbow macaroni

1 can (8 oz) tomato sauce

1 lb. ground beef

1 teas. Salt

1 medium onion (chopped)

1 ½ teas. Parsley

1- 14.5 oz. can whole tomatoes undrained and chopped up

¼ teas. Basil

½ teas. Oregano

1 clove garlic minced

1/3 cup Parmesan cheese

Cook elbows according to package directions, drain and place in a 2 quart casserole dish sprayed with cooking oil. While elbows are cooking, cook beef until no longer pink, and drain, add to cooked elbows. Saute onion and garlic in 1 tablespoon of olive oil until onion is transparent in color; add to elbows and beef mixture. Add the remaining ingredients and mix well. Cover with foil and place in a preheated 350 degree oven and bake for 30 to 45 minutes or until hot and bubbly. Can be sprinkled with shredded mozzarella and returned to oven for 5 minutes under the broiler…….. Serve with some garlic bread and enjoy!
